Cheesy sauce
Ingredients
1 green plantain (~ 250 g)
1 okra
1½ zucchini
200 ml water
30 g seedless virgin olive oil
1 g salt
½ g fructose
Procedure
- Fan bake the green plantain at 180° C for about 40 min;
- Peel 1½ zucchini until the flesh is completely white (no visible green);
- Steam the zucchini until very soft (~ 30 minutes);
- In the meanwhile, peel the okra and remove the seeds inside every compartment;
- Boil it in water for about 5 minutes and remove the okra;
- When the plantain and the zucchini are ready, peel the plantain and cut both in slices;
- Add them to the water where you boil the okra;
- Blend everything and continue to cook for other 10 minutes;
- Add finally the oil and blend again.
- You will have a nice creamy sauce for meatless balls, gnocchi, pasta etc.
