Meatless Eggplant Balls

From people of different eating habits, these delicious Meatlessballs taste like really meatballs. The advantage is that they do not harm any living being and they are more healthy ๐Ÿ˜Ž. Do you want to impress yourself or some of your friends? If yes, follow this easy recipe.

Ingredients

For about 18 balls of 3cm diameter:

500 g fresh eggplant
50 g zucchini
¼ red bell pepper
¼ okra
60 g plantain four
30 g seedless olive oil
5 g salt

Procedure

  • Peel the eggplants and cut them in regular pieces;
  • Blend them until they have the size you wish (see the picture below for a good reference). I suggest to use a food processor than a blender in order to keep the size under control;



  • Squeeze the eggplant with your hands or with a potato masher to remove part of the liquid (see picture below);

  • Blend the pepper, the zucchini and the okra together and add them to the squeezed eggplant;



  • Add 25 g of olive oil, salt and plantain flour and stir the dough until uniform;
  • Shape the balls and place them in a baking trail with some paper;
  • Spray some olive oil on top and fan bake at 180°C (356°F) for 25-30 minutes (probably you will need less olive oil than the rest on the ingredients);
