Raw Cucumber Spaghetti with Carbonara pepper sauce


Ingredients 

  • 1 long cucumber
  • 5 sundried tomatoes (about 89 g dried)
  • 150 g yellow bell peppers
  • ½ avocados (medium size, type hass, you need only the yellow part)
  • 5 g seedless olive oil (optional)
  • 1 g salt (optional)
all the ingredients are given for one abundant portion

Procedure

  • Soak the sundried tomatoes in water for at least half hour and remove the seeds (even if they do not contain salt);
  • Peel the cucumbers;
  • Spiralize the fruits with the spaghetti blade (there are several tools in the market);


  • Cut the peppers and remove seeds and white parts;
  • Cut the avocados in 4 slices and use a spoon to take only the yellow pulp;


  • Blend the ingredients for the sauce;
  • Cut the sundried tomatoes in small pieces, add them to the sauce with the exception of 3 or 4 per portion;
  • Add the sauce to the spaghetti;
  • Serve them with few sundried tomatoes and a little of olive oil on top.
